The classical wine-making process known as deléstage is offered in a totally automated system
In the deléstage all the must is taken from the lower part of the fermenting tank and from there, by gravity, is sent to a collecting tank placed at a lower level
Then the must is pumped back to the top of the fermenter again and spread over the grapes skin cap by means of a rotating head
During the transfer it is possible to heat or to refrigerate the must
In the draining process the skin cap goes down and passes through a dedicated cap-breaker, that divides it into small pieces, rotates them thus increasing the contact surface and enhancing the extracted scents and flavours
Refilling the tank makes the cap rise and float through the breaker tubes once more
The complete automation of the process senses the levels in the tanks and sets the pause and working cycles and allows the total control over the final result with minimal labour. Washing cycles can also be integrated
Palitank’s stainless steel poles are made of reinforced tubes fixed to the tank cylinder and to each other in order to allow an easy dismantling at the end of the wine-making process
With no moving parts it’s very easy to use and install and can be considered the ultimate companion to the wine-making tanks
The rotating spreader is a must distribution system whose rotation is easily achieved only by means of the pressure of the uploading pump. The lower part rotates and thanks to the outlet shape the must is spread homogeneously over the cap.
This system is different from the usual ones (plate shaped) by having a better distribution without the complexity of a motorized device, and can easily be installed on existing tanks
